Ingredients
- 1 cup sugar
- 2 cups flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1 egg
- 1 cup milk
- ⅓ cup vegetable oil
- 1 cup diced rhubarb
Streusel
1/4 cup each: sugar, flour, butter
2 teaspoons cinnamon
Instructions
- Preheat the oven to 350°.
- Grease 5×8 inch loaf pan with nonstick baking spray.
- For the streusel, cut butter into flour, sugar, cinnamon until crumbly. Set aside.
- Whisk together flour, baking powder, salt, and sugar in a large bowl.
- In another bowl, whisk together the egg, milk, and oil.
- Add egg mixture to flour mixture. Combine until just moistened. Fold in the rhubarb.
- Place ½ of the batter into the loaf pan, then sprinkle with ½ streusel mixture. Repeat by layering the remaining batter and then the streusel.
- Swirl the topping into the batter if desired.
- Bake until a toothpick inserted into the center of the loaf comes out clean, about 1 hour.
- Place the pan on a cooling rack. After 10 minutes, remove the bread and let cool completely.
