Cinnamon Rhubarb Bread

Ingredients

  •  1  cup sugar
  •  2 cups flour
  •  1 teaspoon baking powder
  •  ½ teaspoon salt
  •  1 egg
  •  1 cup milk
  •  ⅓ cup vegetable oil
  •  1 cup diced rhubarb

Streusel
1/4 cup each: sugar, flour, butter
2 teaspoons cinnamon

Instructions

  1. Preheat the oven to 350°.
  2. Grease 5×8 inch loaf pan with nonstick baking spray.
  3. For the streusel, cut butter into flour, sugar, cinnamon until crumbly. Set aside.
  4. Whisk together flour, baking powder, salt, and sugar in a large bowl.
  5. In another bowl, whisk together the egg, milk, and oil.
  6. Add egg mixture to flour mixture. Combine until just moistened. Fold in the rhubarb.
  7. Place ½ of the batter into the loaf pan, then sprinkle with ½ streusel mixture. Repeat by layering the remaining batter and then the streusel.
  8. Swirl the topping into the batter if desired.
  9. Bake until a toothpick inserted into the center of the loaf comes out clean, about 1 hour.
  10. Place the pan on a cooling rack. After 10 minutes, remove the bread and let cool completely.
